  1. 1/2 kilogram carrot or gajar
  2. a couple of cups milk
  3. ¹/² pot grated khoya or mawa
  4. 1/2 cup sugar
  5. 5 cardamom pods or elaichi or (skinned and powdered)
  6. 2 tbsps ghee
  7. Handful mixed nuts pista, cashew

    1. Wash carrots under running water. Peel off them and grate in a meals processor chip or with a hand grater. Established this aside.

    2. Dry beef roasts nuts on a low heat till crunchy. You can also chop all of them first and fry in ghee when you prefer.

    3. Set apart to cool and chop them.

    4. Next bring milk to the boil in a heavy bottom container or deep pan.

    5. Add more grated carrots and begin to mix.

    6. Cook until the whole milk has completely evaporated. Keep stirring continuously in between to prevent burning.

    7. Add sugar and stir. Sugars would release lot of humidity.

    8. Cook until half the humidity evaporates.

    9. Add ghee plus stir well.

    10. Carry on in order to cook until the moisture evaporates plus the halwa thickens. Add grated khoya at this stage. Stir and prepare for just 2 to 3 minutes.

    11. Garnish carrot halwa along with nuts. Serve Warm or perfectly chilled.
