  1. 700 gms chicken
  2. 1-2 onion
  3. 1 tsp garlic paste
  4. 1 tbsp ginger paste
  5. 1 tsp black pepper powder
  6. 7-8 whole black peppercorns

  9. 1 tsp mustard seeds
  10. 1/2 tsp jeera/cumin
  11. 1 tbsp crispy roasted curry leaves
  12. 2 tbsp curd
  13. 2 tbsp tomato puree
  14. 1 tbsp chopped coriander leaves
  15. 1 tsp fennel seeds
  16. 1 tsp coriander seeds
  17. 1 tsp poppy or sesame seeds
  18. 1 tbsp kitchen king masala
  19. 2 tbsp dessicated or fresh coconut
  20. 2 dry red chillies
  21. 1/2 tsp turmeric
  22. 1/2 tsp red chilli powder
  23. To taste salt
  24. 3 tbsp refined oil

Step-step making Easy Chicken Chettinad Recipes

  1. Marinate chicken with curd and small salt for an hour. Meanwhile roast the dry masalas like fennel, coriander seeds, poppy or sesame seeds plus when cool grind and set apart.

  2. Heat oil in the wok and fry 2 dry reddish chillies and set aside. Sprinkle mustard seeds and jeera. When they splutter add half crushed whole garam masala and black peppercorns. Then fry the particular chopped onion light brown. Meanwhile create a paste of 1 tsp chopped onion, ginger garlic paste alongwith dried out roasted ground masala and tomato puree.

  3. Add this masala in order to the frying onions and toss. Include the marinated chicken and toss. Include turmeric and red chilli powder. Change the amount of chilli powder based to taste. Add salt and throw on low flame. Add coconut plus fry till oil leaves sides.
