1 medium sized cauliflower

4 large garlic cloves

1/4 cup chopped parsley and cilantro (mixed)

2 small preserved lemons (keep one aside for serving)

2 tablespoons olive oil

1 teaspoon ground paprika

1 teaspoon ground cumin

Salt and pepper

Break or slice the cauliflower straight into medium-sized chunks.

Bring some sort of large pot filled with salted normal water to the boil, add the cauliflower chunks, cover, and cook until typically the cauliflower is tender enough to crush.

Once the cauliflower is cooked properly (it should be tender enough of which you can easily cut and crush it using a fork), drain typically the cauliflower and place in a significant bowl. Mash the cauliflower with some sort of wooden spoon until you get some sort of soft mixture. It doesn’t have to be able to be completely smooth, leave some bits for texture.

In a large skillet, high temperature olive oil on medium heat, put the crushed garlic and cook intended for 2 minutes. Now add the crush cauliflower, ground paprika, ground cumin, sliced preserved lemon pulp, chopped parsley and even cilantro, salt, and pepper. Mix good.

Cook for a several minutes, stirring constantly. Taste and adapt the spices to your taste. Proceed cooking for another 10 minutes right up until the liquids are absorbed.
