  2. 250 g ground meat (either beef or lamb)
  3. 1 large eggplant
  4. 2 medium onions, grated
  5. 1/2 tbsp sumac (somaq)
  6. 1 tsp turmeric
  7. 1 tsp cumin
  8. Flat breads
  9. 1 tsp cinnamon
  10. Salt and pepper
  11. 5 tbs olive oil

  2. Peel off onions and eggplant. Reduce them into small pieces. Sprinkle a few salt on the chopped eggplant plus leave it for 30 minutes until the bitterness sweat out. Then rinse the eggplants and dry them along with kitchen towel. Heat the pan, add the oil. Place onions in the pan and let it to prepare for 6 minutes.

  3. Then add chopped egg plant plus all spices. Let it to cook for 5-6 minutes more. Stirring sometimes. At the last stage add floor beef. Keep stirring until meat will be nicely brown.

  4. Function it with flat bread and garnish with fresh herbs and sprinkle sumac top of the kebab. Sumac gives beautiful lemony taste to kebab.
