  1. 1 Broccoli broken into florets
  2. one Boiled Potato
  3. 1 small carrot peeled and grated
  4. 1 Onion finely chopped
  5. 2 green chillies finely chopped

  7. 2 tablespoons Cilantro or coriander leaves finely chopped
  8. 1 cup moong plus moth Sprouts
  9. 1/2 cup Organic Rolled Oats
  10. 1/2 cup bread crumbs
  11. 1 teaspoon Salt or to taste
  12. 0.5 teaspoon Black pepper
  13. one teaspoon Red chilli natural powder
  14. 1 teaspoon Coriander natural powder
  15. 1 teaspoon kitchen ruler powder
  16. 1 tablespoon olive oil to shallow fry

  1. Take the broccoli florets in a non-stick pan, add 2 tablespoons of water and cook for 2 minutes.

  2. Drain them.

  3. Now put them in the mixer grinder and pulse for a while at a time until they become granular but not mushy.

  4. Now gather all the ingredients in a big plate or a bowl and mix well.

  5. Add the ginger garlic paste and mix with your hands to make an even dough.

  6. Knead well till mixture retains shape and stays together when pressed in hand and does not crumble.

  7. Make even sized medallions or kebabs out of the mixture.

  8. Heat olive oil in a non-stick pan and place the ready kebabs in it and lightly brush them with oil on the surface.

  9. After 2 minutes flip them and cook on a medium flame until golden brown in colour.

  10. The protein packed crispy kebabs are ready to be served. Do the plating and serve with tomato sauce and green chutney.
