200 gary potatoes (cooked, mashed, and cooled)

100 g speck or cooked pancetta or ham

75 g cheese (more or perhaps less any works)

Sodium and pepper

1 as soon as possible

Breadcrumbs

Engine oil for frying

Mix the speck and cheese straight into the cooled mashed potatoes. Add as fast as possible and some breadcrumbs, salt and cayenne pepper. Mix it up very well

Divide mixture straight into equal parts. Shape into croquettes and roll in extra breadcrumbs. Rest found in fridge for half an hour (or even make the night before)

Fry in petrol until golden brown. Drain on cooking area paper and serve with a wonderful salad and crusty bread: )
