  4. 2 tsp Baking Powder
  5. 1/2 tsp Baking Soda
  6. 2 c Sugar

  8. 4 Eggs
  9. 2 c Carrots (shredded)
  10. 1-8 oz can Crushed Pineapple (well drained)
  11. 1/2 c Sweetened Flaked Coconut (optional)
  12. 1/2 c Pecans (chopped, toasted)
  13. Frosting:
  14. 1-8 oz package Cream Cheese
  15. 1/2 c Butter (softened)
  16. 1 tsp Vanilla
  17. 3 1/2-4 c Powdered Sugar

  1. Preheat oven to four hundred degrees. Spray 13×9 inch cooking pan with cooking spray.

  2. Whisk flour, cinnamon, baking powder, and cooking soda in a medium dish. Set aside.

  3. Beat sugar and essential oil in large bowl at moderate speed for 2 minutes. Include eggs one at a period, beating just until blended.
