  1. zest and juice of 1 entire lemon

  4. two tsp runny honey or even agave nectar
  5. 2 courgettes, sliced
  6. 2 tbsp recently grated ginger
  7. 2 cloves garlic, finely chopped
  8. 2 x 250g wholegrain microwave / fast rice
  9. freshly chopped coriander / cilantro to serve
  10. 400 h cooked prawns / chicken breast strips – optional
