  1. 150 gms Butter –
  2. 3 Eggs –
  3. 3/4 cup Caster Sugar –
  4. 1 tsp Vanilla Essence –
  5. 2 navel oranges Zest of
  6. 2 navel oranges Juice of
  7. 1/2 cups Self-rising flour –
  8. 1/4 cup Rice Flour –
  9. Icing:
  10. 50 gms Butter –
  11. 1 cup Icing sugar –
  12. orange Grated zest of an
  13. 1 navel orange Juice of

Step-step making Easy Easter Jaffa Cupcakes Recipes>

  1. Preheat the oven to 180C

  2. Cream the butter, caster sugars and vanilla until it is smooth and ribbon like. Stir in the orange zest and add the eggs one at a time. Add the flour, rice flour and add the orange juice and mix well

  3. Spoon the batter into the muffin pan and bake for 20mins or until the cup cakes are usually done. Allow to cool on the wire rack while you make the icing

  4. For the icing, beat the butter, icing sugar, fruit zest and juice until soft plus fluffy. Using an icing bag along with a star tip draw a group on top of each cupcake to create a nest and decorate along with three or more easter eggs

  5. Done!
