The ingredients Easy Vegetable Medley Recipes

  1. 250 Grms Brussel Sprouts
  2. 1 number Spring Onions
  3. 250 Grms Carrots
  4. 100 Grams (2 med) Parsnips
  5. 265 Gram Tin of Mixed Coffee beans
  6. 160 Gram Tin Sweetcorn
  7. 1 Vegetable Stock Cube
  8. 250 mls Hot Drinking water
  9. Handful Fresh Coriander

Step-step making Easy Vegetable Medley Recipes

  1. Remove brown outside leaves of Sprouts, remove brown part of stalks. Dice. add to a medium saucepan.

  2. Peel, slice and dice Carrots. add to pot.

  3. Peel, slice and dice Parsnips. add to pot.

  4. Remove any dried or brown parts of the Spring Onions. Remove root sections. Dice everything else into small bits and add to pot.

  5. Drain tins of mixed Beans and Sweetcorn. Add to pot.

  6. Stir well. Add Coriander leaves. Stir again.

  7. Put Stock cube in about 1/2 pint, 250 mls Hot Water, stir, then add to pot. Bring to the boil, then cover and simmer for about 15-20 minutes, stirring occasionally, until all vegetables are soft, but not mushy.

  8. Can be eaten on its own, or as a side dish. Can also be frozen up to 6 months, or blitzed to make soup. Enjoy!!
