  1. zest and juice of 1 whole lemon
  2. 2 tbsp Vickys Soy Sauce, please use the search bar
  3. spray oil
  4. 2 tsp runny honey or agave nectar
  5. 2 courgettes, sliced
  6. 2 tbsp freshly grated ginger
  7. 2 cloves garlic, finely chopped
  8. 2 x 250g wholegrain microwave / instant rice
  9. freshly chopped coriander / cilantro to serve
  10. 400 g cooked prawns / chicken strips – optional

  1. Mix the lemon zeal, juice, honey and soy sauce together and set aside

  2. Spray a frying skillet with some oil and fry the sliced courgettes over the medium-high heat for 3 moments until softening

  3. Add the grated ginger, garlic plus the microwave rice to the pan and fry for the further 1 minute

  4. Add the lemon mixture plus the cooked prawns / poultry if using and stir via, cooking only to heat the prawns / chicken through with regard to a final 2 minutes

  5. Serve with some chopped coriander sprinkled over
