Easy Authentic Thai Fried Rice Recipes

The ingredients for making Easy Authentic Thai Fried Rice Recipes

  1. 12 Thai chiles, sliced (for the particular Prik Nam Pla)
  2. 4 tbsp Thai fish sauce (for the particular Prik Nam Pla)
  3. 4 tbsp lime juice (for the Prik Nam Pla)
  4. 1 garlic clove clove, minced (for the Prik Nam Pla)
  5. 1 shallot, cut (for the Prik Nam Pla)
  6. four tbsp canola or veggie oil
  7. 8 ounces poultry cut in 1/2-inch cubes
  8. 4 mugs cooked rice, preferably Thai jasmine rice that has been ready 24 hours in advance
  9. 4 eggs, beaten and seasoned along with salt and pepper
  10. 2 tbsp oyster sauce
  11. 8 garlic cloves, minced
  12. 1 bunch scallions, both white and natural parts, chopped
  13. 1 whitened onion, chopped
  14. 1 tomato, chopped
  15. 1 fresh lime green

  17. 1/2 cup chopped cilantro
  18. Pinch sugar (if needed)

Step-step making Authentic Thai Fried Rice

  1. Combine all ingredients of the prik nam pla into a bowl and set aside

  2. Heat a large wok or large, heavy nonstick skillet over medium-high heat until a drop of water evaporates upon contact.

  3. Add the oil and swirl, then add the onion and chicken. Stir-fry until lightly colored, about two minutes.

  4. Add the garlic and stir-fry until golden, about 30 seconds.

  5. Pour in the beaten egg. Stir-fry until scrambled, then add the rice.

  6. Cook the rice scooping it up and pressing it into the pan, then scooping it up again for about two minutes.

  7. Add the prik nam pla (all for max spiciness, less for less spicy), oyster sauce, basil, tomato and scallions. Stir together for about a half-minute.

  8. Serve, garnishing each plate with cilantro and a squirt of lime.
