  1. 1/4 pound carrots
  2. 1 Tbsp EVOO
  3. 2 cloves garlic, medium, minced
  4. 1 large onion, chopped
  5. 3 cups stock
  6. Juice of 1/2 lemon
  7. Kosher salt

Step-step making Carrot Soup

  1. Cut carrots in 1″ segments.

  2. Heat EVOO in pot more than medium heat. Add garlic and onions, saute until onions are translucent.

  3. Add stock and carrots, deliver to a gentle boil. Lower temperature and simmer 20-30 minutes until celery are tender.

  4. Remove from temperature, cool for a few minutes.

  5. Puree mixture with hand food blender, add lemon and salt to preference.

  6. Serve with the scrap of plain Greek yogurt.
