  1. 2 mug left over rice
  2. 1 cup mix vegetables chopped evenly (I took onion, garlic, ginger, capsicum, tomatoes, carrots, corns and potatoes)
  3. 1 tsp cumin seeds
  4. 1 tsp mustard seeds
  5. 1 tsp red chilli powder
  6. 1 pinch asafoetida
  7. 1 pinch turmeric
  8. 1 tsp oil for tadka
  9. Salt as per taste
  10. 1/4 cup fried peanuts to garnish
  11. 1 handful coriander chopped finely
  12. 1 tsp garam masala
  13. 1 tsp chaat masala

Step-step making Easy Leftover Veg Fried Rice Recipes

  1. Heat a pan, pour oil. Smolder the peanuts and keep aside. Include cumin seeds, mustard seeds. Add red onion, garlic and ginger.

  2. Add rest veggies and stir smolder till they are cooked.

  3. Add spices in addition to cook for a few more minutes. Add rice and mix properly. Include and let cook for 5-7 minutes.

  4. Add coriander and assist with peanuts.
