  1. 7 oz sharp cheddar cheese, grated
  2. 3 Tablespoons unsalted butter, area temperature
  3. 1 Tablespoon vegetable shortening*
  4. .5 teaspoon salt
  5. 1 cup gluten free flour
  6. 2 Tablespoons ice water
  7. Coarse salt regarding sprinkling

  1. Combine cheese, butter, shortening, and salt in the bowl of your mixer fitted along with the paddle attachment. The combination will be crumbly.

  2. Slowly add gluten free flour and then the ice water. You may add a few more drops associated with water to help it arrive together but be careful not really to add too much. You dont want a wet money.

  3. Dab the dough into 2 disks and wrap in plastic cover and chill for at least 30 minutes (or longer).
