1 bunch Amaranthus leaves (maat ki bhaji)

3/4 cup Bengal gram

3/4 cup Split black gram or urad daal

3/4 cup Yellow lentils or moong daal

2 pinch Asafoetida

1 tbsp Red chilli powder

1 tsp Cumin powder

1 tsp Coriander powder

3 Green chillies

1 inch Ginger piece grated

1/4 cup Curry leaves

1/4 cup Coriander leaves chopped

1 Onion finely chopped

Rinse all the lentils thoroughly with water and soak for about 5-6 hours.
