  1. five hundred gm button mushrooms
  2. 1 large finely sliced
  3. 3 green chillies, cut
  4. 1 tbsp rosemary, chopped
  5. 2 tsp minced garlic
  6. 4 tbsp unsalted butter
  7. 1/4 cup chicken/ vegetable stock
  8. 1 tbsp apple company cider vinegar
  9. 1 tbsp olive oil
  10. to taste salt

  1. Heat butter and olive oil within a cast iron/ heavy bottomed frying pan. Add onions and saute on moderate high heat till they turn brownish and are caramelised.

  2. Add green chillies, mushrooms, salt and garlic. Saute on high heat until all the water from the mushroom is absorbed.

  3. Add apple company cider vinegar, stock and rosemary; ontinue to saute on high heat until the mushrooms caramelise and all the particular liquid is absorbed.

  4. Eliminate from heat and serve on toasts.
