  2. 2 Pans
  3. one Baking Tray (I think mine was approx 20cm x 20cm)
  4. 1 Food Pocessor (I used my trusty Nutribullet)
  5. Oven
  6. Produce
  7. 1 Celery Sticks (finely chopped)
  8. one Carrots (finely chopped)
  9. 1/2-1 Leek (finely chopped)
  10. 200 gms Mushrooms (some sliced up, some finely chopped)
  11. 1/2 Medium Onion (finely chopped)
  12. 2 Garlic Clove (finely chopped)
  13. one tbs fresh Parsley (finely chopped)
  14. 3 sprigs Thyme (leave whole)
  15. 1 head Cauliflower (processed) – for the topping
  16. Others
  17. 1/2 tab Dried Mix Herbs (or Pizzas herbs)
  18. 1 tbs Tomato Paste
  19. 1 tsp Paprika
  20. 3 tsp salt (2 for filling, 1 for topping)
  21. 1/2 tsp Pepper (1 with regard to filling, 2/2 for topping)
  22. 1 tbs Rice Flour (mixed in with 1/2 cup cold water)
  23. 1/2 cups Water
  24. 2 Mugs Cashew Milk (for the topping)
  25. 1 tbs butter (for the topping – I used a dairy free version)
  26. 3 tbs Parmesan (for the topping – I used a Vegan Parmesan)
  27. 1 Can lentils (drained and rinsed)
  28. 2 tbs Olive Oil

Step-step making Easy Shepherd’s Pie (Vegetarian/Vegan /Low Carb) Recipes

  1. Preheat Oven to 180 degrees Celsius. Prepare vegetables as per ingredients guidelines (pic doesn’t show the Cauliflower once put in the food processor or the rice flour mixture)

  2. Place 1tbs Olive oil in a pan, add the onion and saute for 5mins.

  3. While the onion sautes, inside the other pan, add the prepared Cauliflower, 2 cups almond milk, one tsp salt and 1/2 tsp spice up to the other pan. Place cover on pan and leave to simmer covered (I didn’t take any pictures, sorry). This will cook down with regard to approx 15 – 20mins cooking (or until softened)

  4. Back to the filling baking pan, Add the other tbs olive essential oil and then leek and garlic plus saute for a further 3 moments. Then add the Mushrooms, carrot, celery, parsley, tomato paste, thyme, mixed natural herbs, paprika, 2 tsp salt
