  1. For the filling
  2. 15 oz ricotta
  3. 8 oz mascarpone cheese
  4. 2/3 cup powdered sugar
  5. 1/2 cup mini chocolate chips
  6. 15 maraschino cherries chopped
  7. 1/4 tsp almond extract
  8. To get shells
  9. 2 cups all of purpose flour
  10. 1 tbsp granulated sugar
  11. 1/4 tsp cinnamon
  12. 1/4 tsp sodium
  13. 2 tbsp unsalted spread cut into tiny pieces
  14. 1/2 pot your favorite red wine beverage
  15. 2 large egg yolk
  16. 1 egg white
  17. Canola oil for frying

  1. For Filling: combine everything in a bowl and fold together. Chill in fridge at least 45 min.

  2. For Shells: In a mixing bowl mix together flour sugar cinnamon and salt. Add butter and work it in with your fingers until it feels sandy.

  3. Add wine and egg yolk and stir untill it comes together. Knead until smooth, cut in half, roll out into a disk, wrap in plastic wrap and refrigerate 45 min to an hour.

  4. In a dutch oven, or large pot, bring canola oil up to 360.

  5. Roll dough out very thin and cut into 3-4 inch circles. Spray cannoli forms with cooking spray and wrap circles around form, brushing the ends with egg white to hold them together.

  6. Fry untill deep golden brown. Pipe filling into shells as they cool. Repeat until you are out of filling and serve.
