  1. 6 lamb shanks
  2. to taste Salt and pepper
  3. 2 tablespoons olive oil
  4. 2 onions, chopped
  5. 3 large carrots, cut into 1/4″ rounds

  7. 1 bottle (750 milliliter) red wine
  8. 1 (28 ounce) can whole peeled tomatoes with juice
  9. 1 (10. 5 ounce) can condensed chicken broth
  10. 1 (10. 5 ounce) can beef broth
  11. 5 teaspoons chopped fresh rosemary
  12. 2 teaspoons chopped fresh thyme

  1. Sprinkle shanks with salt and cayenne pepper. Heat oil in heavy large pan or Dutch oven over medium-high high temperature. Working in batches, cook shanks till brown on all sides, about 6 minutes. Transfer shanks to plate.
