400 gms chicken

1/2 tbsp ginger paste

1/2 tsp garlic paste

2 tbsp curd

2 tbsp tomato puree

1 tbsp white sesame seeds

1/2 tbsp kasoori methi

2 tbsp fresh cream or malai

just one tsp tandoori masala

In order to taste salt

1/2 teaspoon red chilli powder

.25 tsp ajwain

2 charcoal pieces

1 tbsp mustard oil
-
1 tsp ghee
-
2 tbsp butter
-
1 tbsp sophisticated oil

2-3 green chillies
-
5-6 cashewnuts or even walnuts soaked in water

2 drops orange red food colour
Step-step making Easy Chicken Malai Makhni Recipes

Marinate chicken with curd, little salt and mustard oil for an hour. Make a paste of sesame seeds alongwith ginger garlic paste and cashewnuts or almonds.

Take a grilling pan and sprinkle oil on it and fry the chicken items golden brown. Heat 2 charcoals over gas stove and set in a small steel bowl. Place this bowl in between the chicken and pour a tsp of ghee in it and when smoke comes, cover it up. This will give the poultry a smoky tandoori flavour. Set aside.

Meanwhile heat butter in a nonstick pan and sprinkle ajwain (carom seeds). When it splutters, add the sesame and cashew paste, tomato puree, red chilli powder, salt to taste and crushed kasoori methi. Fry and add the smoked chicken items and toss. Add fresh cream or malai and pinch of food colour. If needed little water can become added and cook chicken on low flame. Garnish with fresh cream and green chillies. Serve with paratha, butter naan or tandoori roti.
