  3. 3 cloves Garlic clove pounded
  4. 3 tomatoes
  5. two big Brinjals
  6. 2 Courgettes
  7. 1 grated Carrot
  8. Curry powder
  9. Oregano
  10. Green/Red self defense
  11. Salt

  1. Wash and slice all your vegetables.

  2. Switch and preheat the oven. Then oil your baking tray and place your Brinjals and Courgettes to bake for about 8-10mins.

  3. Remove from the heat and let it cool.

  4. Fry your onions until translucent then add your garlic and continue stirring.

  5. Add Tomatoes and continue stirring until they are dry.

  6. Add the Green Pepper, Carrot spices, salt and stir for one minute then add your baked Brinjals and Courgettes and stir for 2 minutes.

  7. Serve while it is hot with Rice.

  8. Remove from the heat and sprinkle with Dhania.
